The Fanti family has always taken a great pride in it’s olive growing, so much so that the Estate now boasts over 8,500 olive trees and a traditional olive press. The most prestigious Tuscan varieties, Correggiolo, Moraiolo, Leccino and Olivastra Seggianese have been maintained and re-planted at the highest levels of our hills. Thanks to traditional procedure and to the early picking of the olives, the oil is characterised by very low acidity and large complex aromas. With the natural maturation the oil has a softer taste and can therefore also be used for fish dishes.
