The production of Extra Virgin Olive Oil has been one of the core businesses of the Fanti Family since the early 19th century.
Filippo kept planting olive trees which now sum up to 8500 plants of four different varieties: Correggiolo, Moraiolo, Leccino
and Olivastra seggianese; all are grown according to the Integrated Agriculture requirements.
The family also owns a traditional oil press in the center of the village of Castelnuovo dell’Abate where the hand picked olives
are crushed using stone wheels within 24 hours from the picking. A cold extraction using mechanical press follows the crushing and grants the integrity of the flavours.
